This morning, I was out of oats and had a bit of a sweet tooth for something more than fruit, so I tried making something new. Made with no oil, refined-sugar, or eggs, this mug-cake is vegan, gluten-free, keto, and super healthy! What's more, it only takes 1 minute to bake in the microwave, which is perfect for when you're short on time or are simply feeling lazy.
You can switch the peanut butter with cashew butter or almond butter. As for the milk, I used coconut milk because it's what I have I at home, but you can use any other plant milk. I listed below coconut sugar as an ingredient, but you can substitute this with any other granulated sugar.
If your cake batter is too dry or thick, add one more tablespoon of your milk of choice.I also don't recommend you making the dough in advance because it will absorb the liquid and dry up. It's best if you make it immediately.
