I'd be lying if I told you there is something better than cookies, but what if I told you there is a way to make cookies much more delicious? That's right, adorable shapes! Our eyes certainly eat as well, and no eyes can resist these adorable Christmas cookies, nor will your nose resist the delicious perfume that will fill your home once these cookies hop into your oven. So bring some festive cheer to your family and guests with this healthy and vegan take on the traditional gingerbread cookies with all their illustrious flavor.
As this particular holiday season can be quite stressful and overwhelming, you might be thinking how on earth you're supposed to have time to bake one more dessert. Well, I'll let you in on something: this recipe was especially made for lazy people like me. In just 20 minutes, you'll be in and out of the kitchen with a tray full of heavenly delights.
These gingerbread cookies are absolutely delicious and heart-warming, fulfilling your inner child and satisfying any feeling of nostalgia or craving for the holiday cheer. They've been called "better than the IKEA ginger thins" by my brother, which is saying A LOT (especially since he's not one for compliments).
What's more, this recipe is healthier than the traditional gingerbread cookies. With a flavor explosion of all-natural and whole ingredients, these cookies will have you and your guests gaping and drooling at the fact that they are sugar-free. You can also easily make them gluten-free by subbing the spelt flour for an alternative.
Must I give you any other reason to start running right into the kitchen?
If not, without further ado, put your aprons on and let's jingle all the way into the oven:
*Stores for about a week.
What did I tell you, really simple right? Within minutes, you'll soon be munching on some delicious cookies (just be sure to leave some for your guests!)
Enjoy, and don't forget to tag @summermonkee in your beautiful pictures!
