Soft, chewy, and incredibly fluffy. This healthy apple cake (or apple bread) is perfect for the Autumn season. Apples are one of the staple foods during this time of the year, and the cinnamon in this recipe completes the experience, combined with a perfectly moist and mouth-watering texture.
For this cake, I used wholesome ingredients, opting for an as-healthy-as-possible recipe. With no refined sugars, this vegan and gluten-free delicious treat is healthier than a typical cake and is fit for all. It’s a must-try recipe for this time of the year, so make sure to include it in your Thanksgiving or Christmas table!
To avoid any kinds of butter in this recipe, I used applesauce instead. This is not only lower in fats, but it also allowed me to cut back on the added sweetners since apple is already quite sweet, and it resulted in a mouthwatering texture that is perfectly moist and chewy, as well as it adds to the autumn feel.
You may choose to use store-bought applesauce, though insure it has no preservatives if possible. I used homemade applesauce, which is actually very easy to make (trust me, I had never done this before):
How to make your own applesauce:
All you need is 3 medium-small apples and half a teaspoon of cinnamon. Really, it’s that simple.
First, peel the apples and add them to a saucepan with about half a liter of boiling water and cinnamon. Leave them to cook until tender. Then, all you need to do is to drain any remaining water and purée the apples using an immersion blender until uniform.
Done! Now you can enjoy a texture that is sure to make you drool all over.
Now that we’ve got that covered, let’s jump right into the oven and leave the house smelling so incredible yummy:
* Can sub for any other plant-based milk.
Storing: This cake keeps best in the fridge, but it will last for about a week at room temperature.
It also serves as a great birthday cake for apple-pie lovers, that's what I did for my mom's birthday.
