Best Healthy Dark Chocolate Cookies (Flourless + VEGAN)

As you will eventually figure out in this blog, I have a serious addiction to chocolate. After various trial-and-errors, I can honestly say that I've come across the best dark chocolate cookie recipe. It has that strong chocolate flavor without being too sweet, with the brownie chewiness and the outer crunchiness of a cookie. Totally guilt-free, enjoy it baked or raw! The softness and explosion of flavor will no doubt drag you into this inescapable yet heavenly obsession.

These are dairy-fee, gluten-free, and refined sugar-free. Perfect for all chocolate lovers!
Ingredients:
1/3 + 1/4 cups coconut sugar (or 1/2 cup if you like them sweeter)
1/3 cup cacao powder
1tsp vanilla extract
1 flax egg (1tbsp ground flax + 3tbsp water, mixed)
1 cup natural, crunchy peanut butter
Directions:
Preheat oven to 180ºC & line a baking sheet on an oven tray
In a large bowl, mix peanut butter and coconut sugar with a spoon until well combined
Add flax egg and vanilla, keep mixing
Add cacao. The batter will thicken quite a bit, so it might be easier combining with your hands
Roll mixture into balls and flatten them onto the baking tray. (don't flatten them too much if you want them nice and soft.
Bake for 10-12 minutes, then let them cool on a wire rack for at least 10 minutes (that is, if you can hold yourself back for that long!)
If you'd like, you can also add chocolate chips on top. I personally like them best without chocolate chips since the chocolate taste is already so explosive.
