Think that the best cookies are supposed to be crunchy and crumbly? That’s just because you haven’t tried these soft and fudgy cacao cookies.
One bite into these cookies and you’ll fall right into brownie heaven. As always, they are easy to make, have few and healthy ingredients, and they are not overly sweet. Healthy, yummy, and no nausea. What more could you ask for?
Just look at these babies. They’re so pillowy and soft, they’ll melt right through to your heart.
With just 7 simple ingredients, you can be munching on these thick, soft and fudgy chocolate clouds in just 20 minutes.
So, get your aprons ready, your oven hearin, and your bellies growling as we hop right into the recipe.
Ingredients
1/2 cup coconut oil (softened, but not melted)
1/2 cup coconut sugar
1/2 tsp vanilla extract (optional)
3/4 cup unsweetened plant milk of choice*
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1 and 3/4 cups whole wheat flour**
1/2 cup vegan chocolate chips (optional)
Instructions
Preheat the oven to 180ºC.
Mash the coconut oil and sugar in a bowl until well combined and creamy with no chunks.
Mix in the vanilla extract, milk and cocoa powder until well combined.
Add in the baking soda and mix again before stirring in the flour and chocolate chips.
Roll small*** balls with your hands and place them onto a baking sheet pressing them down a little.
Bake for 12-15 minutes or until a toothpick comes out clean.

* I prefer to use a less sweet milk, so I used almond. ** Or sub for a GF version *** These cookies grow quite a bit, so be sure not to make them too big
