Summer has settled and the lemon tree in our backyard is packed. Unfortunately, however, it is still too young and its branches are much too weak to handle the monstrous-sized lemons it produces, so they are falling a bit prematurely. Hence, we have a bowl full of lemons sitting on the counter and waiting to be used. Looking at them, I decided to design a new recipe. I used two lemons in my experiments, but not fruitlessly. With one not-as-successful batch and another yummy batch, I came up with this delicious recipe! After all, when life gives you lemons... bake cookies!
These cookies are super easy to make and the result is so incredibly fluffy and chewy! It only takes about 10 minutes to prep, and another 10 minutes in the oven. However, I do recommend leaving the dough to rest for about 30-60 minutes just to ensure the cookies turn out super fluffy.
I did need to use a flax egg just to moisten the dough, but if you use almond flour instead of oat flour, you can skip this step.
What screams 'Summer' more than lemons? Well, besides watermelon. In the morning, I love to sip on some lemon and ginger tea; while on scalding afternoons I love some fresh lemon juice. Well, besides its versatility and place in my heart, this fruit is full of nutritional benefits.
Benefits of Lemons
Lemons are high in Vitamin C, which is beneficial for the immune system and heart, thus it can possibly reduce the risk of heart disease and stroke, as well as reduce cholesterol. It is also high in fiber, which can increase satiety and aid in weight loss. It has also been said that lemons can prevent kidney stones, lower anemia since their vitamin c aids in the absorption of iron, and possibly reduce the risk of some cancers.
