First of all, HAPPY EASTER!! I am so glad I was able to share this recipe with you just in time to celebrate this holiday a little more delicious. Now, as you might have noticed, I am quite the sucker for family traditions. Easter is not a holiday we celebrate in any big form, but we do have little traditions so, to me, Easter means a fun little hunt for chocolate eggs in our back yard and a warm slice of Folar.
Folar da Páscoa is a traditional cake baked on Easter in Portugal. Although there are many variations of it, recipes usually contain anise and cinnamon - a delightful combination I might add. It is a sweet bread-like cake that marks this festive day with the best Spring flavors.
I tried searching for vegan recipes of this cake, only to find non-traditional variations that were either too complex or quite unhealthy. Hence, I decided to make my own. In this recipe, I combine the traditional flavor of this seasonal bliss with vegan and healthy ingredients. Now, follow me onto a delicious cultural trip.
In case you are not familiar with the Folar, I swear on my taste buds that this recipe tastes EXACTLY like the traditional treat. There is, however, one slight difference: the cake usually has a boiled egg in its center, which I decided to replace with an apple as a vegan alternative. However, this is totally optional and you can omit the whole thing altogether.
I also made sure this recipe was incredibly simple and relatively fast for the lazy bakers like me. Heck, you probably even don’t have to go out and shop for any ingredients!

* Can sub for any other plant milk
** Can sub for coconut oil, but traditional Portuguese recipes tend to rely on that olive-oil hint of flavor (even though I don't like it very much)
