Peanut butter chocolate chip cookies are one of my favorite things in the world. Crunchy and crumbly but soft at the same time. What's more, they are super healthy, packed with protein, and can be vegan if you choose to use flax eggs instead. I have tried various versions of Peanut Butter cookies, but this is my favorite recipe so far, so I am here to share it with you.

Peanut Butter
Besides being an addicting yummy ingredient sent from heaven, peanut butter is a great source of protein and healthy fats for a balanced diet. It contains monounsaturated fat, which helps to reduce the risk of heart disease. Being a low-carbohydrate food, it does not impact blood glucose levels, which is great for managing blood sugar levels. Its protein also helps build muscle and assists muscle recovery after a workout.
Peanut butter is also high on magnesium, which is important for bone maintenance, and Vitamin B6 which is essential for maintaining a healthy brain and good mood.
Coconut Sugar
Coconut sugar is more beneficial than other sweeteners such as white or brown sugar since it is less processed, therefore having more nutrients that contribute to a healthy body. It is high in potassium, calcium, and magnesium, while also having rich vitamin contents, particularly Vitamin B6. This is required for healthy cell development. B vitamins are necessary for metabolic unction, maintaining healthy skin and muscles, boosting the nervous and immune systems and promoting cell development.
