Antioxidant-Rich & Immune-Boosting Ginger Soup (No Potato)

Having less and less patience and energy to cook at dinnertime, and also somewhat (strangely) missing the warmth and savoriness of homemade soup, I decided this was what I was going to do. The only ingredient I was sure I wanted to use was ginger because, I don't know about you but I find ginger incredibly comforting. As for the rest of the ingredients, I looked into my storage spaces to see what I could use. As you may know, we have a space in our garden where we grow fruit and vegetables, so I had a large zucchini at hand and frozen pumpkin pieces - remains from our last pumpkin. It was perfect enough because, with this, there is no need for potato.


That's almost all you need. The rest of the ingredients are mostly spices and flavor/nutrient enhancers. Yet, like all of my recipes, I limited this soup to having few ingredients, so it's quite simple and easy. It is also pretty fast to prep - I made mine while I was cooking lunch.

Ginger

Long used for its medicinal benefits, this plant root is considered a superfood with powerful healing agents. Ginger is known for its abilities in aiding digestion, immunity, and fighting nausea. It also has powerful anti-inflammatory and antioxidant effects. Another benefit of ginger is that it can help reduce muscle pain and soreness due to its anti-inflammatory properties. It may also lower blood sugars with anti-diabetic properties, and can also reduce some risks of heart disease. Being extremely valuable for our health, ginger offers many other benefits, such as treating chronic indigestion, reducing menstrual pain, lowering cholesterol levels, improving brain function, fighting infections, and reducing the risk of some cancers.


Due to its wide array of benefits, I try to use ginger as much as possible, whether it's placing it in tea, grating it over stir-fries or oven-roasted veggies, or making this delicious and heart-warming soup!

*For me, this soup lasted 6 days in the fridge before starting to bitter

It’s really fast and easy to make and most of the time it takes is the cooking, so there’s not much of a hassle. The result is super savory with a touch of spiciness, and it’s the perfect remedy for a lazy night.
