Oven Roasted Veggies

Every Saturday, we restock our fridge with fresh vegetables, which means the previous week's remains need to be eaten before going bad. So, we had the idea of roasting a bunch of vegetables for a delicious, filling and warm lunch.


It is very simple. Just grease a casserole pan wit, AND h some olive oil (or any other kind of oil so not to stick) and place your vegetables inside (the list of the ones I used is below). We like to stack them orderly for the aesthetics, but you can throw them all together in a mix to spread the flavors if you'd like:

Then, top it with zucchini and tomato slices to spread their juice, as well as with some sprinkles of oregano and ginger zest.

Then, just pop it in the oven at 200ºC for about 40 minutes or until the potatoes and cassava have softened. And there you have it! A warm, delicious and nutritious lunch that is sure to keep you full until dinner.

This is totally optional, but I like to eat this with half a corn on the cob on the side.

Sweet Potato

Highly nutritious root vegetables that are a great source of fiber, protein, Vitamin A (eye vision, immune system, and organ health), Vitamin C (essential for repairing tissue, protein metabolism, and for the immune system), Vitamin B6 (essential for protein, fat and carbohydrate metabolism and the creation of red blood cells), potassium, manganese, and others. Sweet potatoes are also rich in antioxidants that can protect your body from inflammation, chronic illnesses such as cancer, heart disease, and ageing. They also promote good gut health and may enhance brain function.


Cassava

Although it's toxic when raw, baked or cooked cassava is a great source of nutrients. It's high in vitamin C, thiamine, riboflavin, and niacin. It is also a source of resistance starch, which boosts gut health and benefits the digestive system.


Beetroot

I first started eating beetroot because my doctor told me to, due to my iron deficiency. It is an iron-rich vegetable that helps lower blood pressure, can boost your stamina, benefits your liver, and may have anti-cancer properties. It is also rich in other minerals, such as immune-boosting vitamin C, fiber, potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas).
