There are a few heartwarming dishes you might come to miss if you're just starting off your vegan journey. But, luckily, nowadays most dishes have a veganized recipe. One meal I surely missed was carbonara, so I wondered if I could make my own veganized version. This is the result: super yummy, cheesy, healthy, and versatile for other uses besides pasta - I originally made this for carbonara, but then used the leftovers to top some of my poke bowls and nourish bowls.
Not only does the nutritional yeast provide you with vitamin B12, but it also gives this sauce a cheesy flavor, similar to that of the cream used in regular carbonara. Trust me, I was skeptical at first, before I bought it for the first time, but it does work wonders.
Meaning to serve only 2, I accidentally made this recipe for 4 servings, so I had to store some of the sauce in the refrigerator. But, all is well because I got to test how long it lasts and now I can tell you, haha. It kept well for 1-2 weeks, but it tastes best in the first week.
