This being my first Christmas as a vegan, I was a bit at a loss with what to make for dinner. Where I'm from, we celebrate Christmas Eve dinner with baked potato, chickpeas, cabbage, eggs and codfish. To follow this tradition as much as possible and join my family in this meal, I wanted to somehow eat the same dish as everyone else, but without the eggs and fish. However, I also didn't want to simply eat boring beans. I mean, it’s Christmas, we all deserve something special and magical. So, I looked up what other countries serve in their yuletide meals and found that quite a few eat meatloaf. I was curious about how I could 'veganize' this meal, so I did some exploring before I formulated this delicious recipe.

In terms of aesthetics it might not be the prettiest, but it sure is one of my yummiest meals yet.
This meatloaf has the consistency of as its regular version but with a bonus crunch of the nuts and extra spiciness, all of which only enhance the experience - a new tasteful experience of a boring old meal. After trying this protein-rich explosion of flavor, I definitely do not miss the traditional meatloaf.

Directions
*You can also use an immersion blender, though you want it to be textured and not purée-like, so be sure not to over-blend.
Also makes for a delicious meal with some mashed sweet potato and cabbage.
