Wait till you try this protein-packed gluten-free bread made of buckwheat, considered a superfood by many.
Who ever said food can't be art? With a bright, toasted crust shielding its soft and dark interior, this bread will certainly have you taking hundreds of pictures once you lay eyes on it. But,of course, it's not all about the looks either. If you have never tried buckwheat before, it is incredibly flavorful and extremely worth trying.
If you're a gluten-free bread lover, then you might be familiar with the frustration of gluten-free recipes requiring weird ingredients for the bread to stick together. Well, this is where buckwheat is most unique. This recipe is all-natural and vegan, so you won't need any eggs or gums! It holds itself perfectly well without any special ingredients and maintains a perfect consistency easy to slice through.
Just look at this beauty. You can almost get a marble effect out of it.
Benefits of Buckwheat
Despite its name, buckwheat is, in fact, not a grain but a seed. It has recently been popularized as a superfood due to its high nutritional value and antioxidant properties. It is rich in dietary fiber and packed with protein, manganese, magnesium, phosphorus, niacin, zinc, folate, and vitamin B6. This non-allergenic groat has thus been credited with heart benefits and reducing inflammation, reducing blood sugar as it is very low in the glycemic index, and protecting against certain types of cancer.
What's more, it is super easy to bake! All you need is buckwheat flour, water, and a packet of gluten-free yeast.
So, without further ado, let's hop right into the oven! (This I would actually not mind doing right now in this teeth-shattering cold.)
* Make sure not to press down hard on it while spreading the dough! This will prevent the air from flowing, which will result in a dense dough rather than the desired fluffy sponge.
How to enjoy this bread
The buckwheat itself has an intense flavor, yet it still goes well with basically anything. Serve couple of slices with your toppings and spreads of choice, be it your favorite nut butter, avocado or jam (try this healthy, sugar-free cherry & strawberry chia jam).
Storing the bread
Buckwheat bread actually spoils faster than my whole-wheat and rye breads (I learned that the hard way), lasting for just under a week at room temperature. To make it last longer, make sure to store it in the fridge, or you can even freeze it for later use!
